Some things are just ridiculously good.
Hujiao bing is one of them. Hot from the oven, still steaming, with that peppery, savory filling inside a crisp, FLAKY, blistered bun. The kind of hot where you know you're going to burn your tongue and eat it anyway. Honestly, I don't even care haha.
I could eat ten, but I never do because there's just so much other food whenever we go to their night markets.
I don't know if I'll ever manage to write about everything good I ate in Taiwan, or anywhere, actually. There's just too much of it, and some things are better remembered as a photograph, a little bit of steam, and the very immediate thought: I need another one of these.
